João Pedro Marques is a PhD student in the Doctoral Programme in Food Consumption and Nutrition Sciences at the Faculty of Nutrition and Food Sciences and the Faculty of Sciences of the University of Porto (FCNAUP/FCUP). He earned his Bachelor’s degree in Biology from FCUP in 2020 and completed his Master’s degree in Food Consumption and Nutrition Sciences at FCNAUP/FCUP in 2022, focusing his research on various technologies for processing edible insects.
Currently, he is developing his doctoral thesis entitled “Integration of advanced methods to evaluate consumers’ response to innovative food products consumed in different contexts, with the integration of the concept of ‘Portugality'”. This research is being conducted at GreenUPorto and Sense Test, under the supervision of Professor Luís Miguel Cunha and Doctor Célia Rocha, and is supported by an FCT Doctoral Scholarship (2023.03845.BDANA). His current work focuses on studying the impact of context on consumers’ response to food products, using methodologies such as ad libitum consumption and repeated exposure, as well as different immersive technologies, such as mixed reality and video walls in the realm of sensory analysis.
